Fresh Yellowtail Carpaccio with Crispy Garlic

Makes 4 servings

2 tbsp olive oil
1/4 cup shaved garlic
12 oz fresh yellowtail or sushi-grade tuna, like ahi
1/2 of a lemon
Sea salt & cracked white pepper
1/4 cup extra-virgin olive oil

Heat the 2 tablespoons oil in a sautè pan over medium heat. Add the garlic; sautè for 2 to 3 minutes until crispy and light in color. Remove garlic from the pan and place on a paper towel to drain; set aside.

Slice the tuna in thin pieces and arrange uniformly on a platter. Squeeze the lemon over the fish, then sprinkle with sea salt and white pepper to taste. Top with the crispy garlic and drizzle with the extra - virgin olive oil.
